Thanks for the top vid will try this way in future. Suggestion, try setting your video camera for youtube vids to record in lower quality to begin with, or convert b4 upload. I know you uploaded into lower quality with the youtube conversion, but I assume those pesky lines have come up even when you play it at home. It's a problem with good cameras I've had myself. You can use splash player lite to play your high quality vids you want to keep at home. Hope this helped you in return for your vid

Very nice filleting. My technique is almost exact to how you've shown. People who ask, why skin it?, Simple - crumb and fry it. If you've never had battered flatty tails before, you're missing out.

I take it that removing the skin isn't essential? As in, if you were going to bake it, panfry it or cook it on hotcoals.

No need to skin it if you don't want. Is easier to fry without the skin as the skin shrinks when cooked and distorts the shape of the fillet
