Mark, You inspired me to try my first Trappist ale which what the Chimay. These ales are truly special. I have also had the Orval and your review is right on. I had the Rochefort #6 you review here and loved it (a tie with Chimay Blue). Mine had gobs of yum yums. These ales are sublime and will now be a staple beer for me. Now I am going to try them with cheese. Keep up the ceramic grilling. Cheers!

@unpescad0 What's wrong with the shorts? The Rochefort is a very good beer. I need to get another bottle.

Dude - you must pour it slowly, with the glass properly tilted - this will avoid the giant head. Swirling the glass will not bring out the aroma when you have a 3 inch head covering the surface - it will merely serve to enlarge the already excessive head - leading, inevitably, to your getting a "belgian nose".
