I have wanted to try a Trappist Ale for a while. The reputation of the beers produced by these 7 breweries is very strong and, believe it or not, I hadn't had one before. So when I was in the beer store I picked up a bottle of Trappistes Rochefort 6 which is supposed to be very good. I decided to have some Trader Joes Blue Cheese with it to see how it went with a stronger cheese.

  • Dude - you must pour it slowly, with the glass properly tilted - this will avoid the giant head. Swirling the glass will not bring out the aroma when you have a 3 inch head covering the surface - it will merely serve to enlarge the already excessive head - leading, inevitably, to your getting a "belgian nose".   • @corkjazzman Yeah, I poured it a bit aggressively. It still tasted great and I'm doing fine with the other 150+ posts I've done since. Cheers!

  • Mark, You inspired me to try my first Trappist ale which what the Chimay. These ales are truly special. I have also had the Orval and your review is right on. I had the Rochefort #6 you review here and loved it (a tie with Chimay Blue). Mine had gobs of yum yums. These ales are sublime and will now be a staple beer for me. Now I am going to try them with cheese. Keep up the ceramic grilling. Cheers!
