IRISH POTATO CANDIES
1/4 cup butter
4 oz. (1/2) cup cream cheese
1 tsp. vanilla
1 pound powdered sugar (3 and 1/2 cups approximately, the average size box equals1 pound.
7 oz shredded coconut
2 tsp. cinnamon

1. In an electric mixre or by hand, combine the butter, cream cheese, and vanilla till smooth.
2. Add the powdered sugar and beat until smooth.
3. Add the coconut and beat till well combined.
4. Refrigerating this mixture for an hour or 2 this will help you when you roll the balls.
5. Put the cinnamon on a plate and shake the plate to spread out the cinnamon.
6. Using teaspoons drop about a tsp. of the mixture onto the cinnamon. Doing that will get a little cinnamon on the mixture which will help you when you roll the candy into a ball using the palms of your hands.
7. Now roll the candies again in the cinnamon to cover them completely.
8. Place the candies in little candy cups on a plate.
9. Cover the candies and refrigerate.

  • In the comment below I meant to say that the brown sugar is not a good substitute for the cinnamon

  • Coconut is the main ingredient in this recipe and brown sugar would not be a good substitute for the brown sugar, too sticky and sweet. Coco would be a better substitute for the cinnamon.

    But there is no substitute for the coconut there for we need to find you another recipe.

    Many recipes use mashed potatoes. I don't really like those which is why I made this recipe. Maybe I can find you a good one. Have you looked and what did you come up with.
