Most of the New Testament isn't simply a recording of Jesus' words. It contains mostly letters written in Koine Greek by Christ's apostles and disciples.

You're right. He spoke Hebrew and Arabic. The new testament wasn't written by Jesus, though, but the apostles and Paul of the early church. They weren't only Jews, but Gentiles, too, especially the Greeks (that's why in the new testament we have letters to the Greek churches, like Corinth). There exists copies of the gospels in other languages, too. The early church reached as far as India. The Greeks were more meticulous with scripture, though, being in an intellectual society with freedoms.

No, they're right. Acts 26:28, 1Pe 4:16, and
Acts 11:26 all mention it, or at least it's greek counterpart, Χριστιανός (Christainos). ...though I would say "almost two thousand years ago".
