  • I alway save oil when I took out. Cooking oil can be use 4-5 times.

  • Just a quick question, but why sear the shrimp *beforehand*? That keeps the full effect of the other flavors from being absorbed into the delicate flesh of the shrimp (or is the sauce intended to just be a "glaze")?

  • I like mine to be a bit crispy before coasted with flavors.

  • What was the sauce you placed in right before the sugar? Fish sauce or soy sauce?

  • Take it from a real chef, you killed those shrimp to slow with your work, need to work faster they are over cooked by about 1 min, remember they will keep cooking out of the pan. cooking needs to be faster, And yes i have been to Thai cooking School as well as Worked in hotels around the world.. Need to put everything you need in one place so it is close saves time and in the end you get a better flavor
