神經細胞上有一種谷胺酸鹽的接受體,很多人吃了味精會頭痛,是因為味精的化學成份黏在神經上的谷胺酸鹽接受體,打開一個鈣通道,令大量的鈣湧入細胞,造成鈣超載而令神經細­胞受傷。
薑能減少谷胺酸鹽接受體(Pak. J. Bid Sci vol 12, pp.201-212),故能減少味精對神經系統的傷害。
