主料:肘子辅料:西兰花、葱、姜调料:盐、味精、酱油、白糖、料酒、八角、大料、桂皮、水淀粉烹制方法: 1、将肘子去骨后,用铁筷子插住,皮朝下在火上烤至表面焦糊,锅中水烧热后放入,浸泡片刻刮去表面焦糊层,捞出放在碗中,加入葱姜、大料、八角、桂皮,加适量开水,加料酒­、酱油、白糖、盐调味,待蒸锅上汽后放入蒸2个小时左右; 2、锅中加水,放入盐、白糖、食用油,烧开后将西兰花焯熟围在肘子旁边,蒸肘子的原汤倒入炒锅中,加白糖,水淀粉勾芡,放入味精出锅淋在肘子上即可。特点:色泽鲜亮,软嫩­咸香。
