Derren Brown revealed it by himself in this show, so I don't see a point to explain it in this video. You're just pointing out the details which everyone saw anyway. Like touching him and anchoring. Everyone's alread got it.

Yes, I think this is the more tangible explanation. Derren, besides being a mentalist is also an illusionist, which means he can easily switch the envelope.

All of the subtle suggestions and what not about bikes is all misdirection and showmanship. There is no hypnosis taking place here - it's an illusion. The trick didn't lie in getting Simon Pegg to change his mind without knowing it. Pegg never wrote "leather jacket" - he always actually did want the bike and that's what he wrote. The trick lies in finding out what he wrote before hand, and switching the envelope. Everything else is misdirection to make you, and Pegg, believe otherwise.
