Vergil is quite an easy boss after you get a good pattern going. After that, dodging and attack becomes a lot easier. I tended to jump, gun him down, and right when I was coming back to the ground I'd get a combo going with one of my swords.
Also, I hate when he does that stupid hair thing. D:<
