When in comes to fueling the economy, there's nothing like having a university in the state. As a direct result of a longstanding relationship with the UW-Madison Center for Dairy Research, cheese maker Mike Brennestuhl was able to start and grow a new cheese manufacturing business in Seymour, Wisc., that employs 54 people with an annual payroll of more than $1.25 million. Seymour Dairy will use up to 70 million pounds of Wisconsin milk a year and has now begun a plant expansion project to help it meet customer demand.
