You're gonna have to play with your capture/encoding settings a lot. When you pause the video, there are 4 frames blended into one in some parts... It gives the illusion of smoother playback, but drastically degrades video quality and adds a ghosting effect.
Are you capturing from composite/s-video signal or from an HD signal? Are you capturing uncompressed?
