I haven't brewed in a few years, but got the 'bug' again and decided to make some more again. This is a wild berry hard cider and a simple I.P.A. This is about 5 days after pitching yeast for the Wild Berry Hard Cider, and 2 days after pitcing yeast for the I.P.A.
For anyone who is interested, here is the recipe for the Wild Berry Hard Cider (All standard sanitization practices followed with everything!):
5, 2.84 L bottles of 100% apple juice (no preserves!!!)
6, 0.355 L Albertsons brand Wild Berry Punch concentrate
3, 0.355 L TreeTop Apple Cranberry concentrate
1 pack Red Star Premier Cuvee yeast
OG: 1.078
I plan on letting this ferment for about 3-4 weeks, till FG is 1.000. Then priming with corn sugar and letting carbonate in the bottles for about 3-4 weeks min. It will turn out very high ABV (~9.5-10.5%), be very dry, bubbly and taste very good. It only gets better with age....it will taste best after aging for at least a year! If you are interested in home brewing this is the most simple way to get started! No boiling, not too much work involved at all. The hardest steps are just sanitizing everything. I do this with just an iodine solution. Simple as it gets!
