This recipe calls for Ghiradelli chocolate and is used for my chocolate wedding cake recipes. It is the best for filling a cake because it firms up when cold due to the butter in the mixture. This helps to hold the cakes together more firmly. It softens back up at room temp but is great cold too. Enjoy!

  • How long can you store the mousse in the frig? Can I make it ahead a few days then fill the cake later?

  • @sirensmyst Hi yes you can make the mousse ahead and fill the cakes later. I prefer to use it right away when it is soft and then let it firm up inside the cakes, but have used it after it firms up as well.

  • Hey loralie, I m gonna give it a try this week, can I use the mousse to cover a cake as well? If so should I keep it refrigerated at all times? This will be my first at using any type of mousse!

  • @Cristylive Hi I have never had a problem with getting sick from eating this chocolate mousse recipe. I always use fresh eggs that have been stored properly in the fridge. You can opt out of the egg yolks though if you are uncomfortable with it. I have made this recipe with just the whites. It is not quite as rich and delicious but still good. Also the cake must be refrigerated well after filling the cake .
