This scene lays the game bare and it's almost skittishly visualized!

Scorsese introduces a major motif. Good Wholesome Meat/FOOD and the cooking of it. in a way, implying that that's what it's all about. this is carried throughout the movie (at paulie's house, the restaurant kitchen in the famous long tracking shot, and the prison scene with the garlic-blade technique) and till the end, with the "meatball and sauce" when Henry plans his drug/gun deal for the last time.
