Eating certain foods for halting the growth of cancer-feeding blood vessels could be key to treating tumors, according to Dr. William Li, head of the Angiogenesis Foundation http://www.angio.org/ Blood vessels, literally the lifelines in our bodies, deliver the nutrients our organs need to survive. But they also feed cancerous growths.

Cancers don't start out with a blood supply. Instead, they begin as tiny nests of cells that if given a blood supply will grow into cancer. Without a blood supply, most of these cancers will never become dangerous.
What does this have to do with Bok Choy? Dr. Li is conducting a million person study, the world's largest study on cancer prevention with foods. One of the foods that he has studied that has great potential for preventing cancer from growing is bok choy. I was thrilled to learn this, because it's one of the easiest vegetables to prepare and delicious at that.
