Okay my friends, I am off to Tennessee!! I will loads videos of our adventures. I'll take a recipe or two with me to load if I get the time as well. I may not get a chance to reply to any of your comments, but if I have 10 minutes, I will! :)

From Wikipedia: Karaage iis a Japanese cooking technique in which various foods — most often meat, and specifically chicken — are deep fried in oil. Small pieces of the food are marinated in a mix of soy sauce, garlic, and/or ginger, then lightly coated with a seasoned wheat flour or potato starch mix, and fried in a light oil — similar to the preparation of tempura.

THE most delicious dish I may have ever prepared.

1-1/2 lbs. boneless skinless chicken thighs
1/4 c. shoyu
1/4 tsp. finely grated ginger
2 large cloves garlic, mined
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp mirin
1/4 c. flour mixed with 3/4 c. cornstarch
Oil for frying

Cut chicken into bite-sized pieces. To make marinade, combine shoyu, ginger, garlic, sugar, salt, pepper and mirin. Marinate chicken for at least an hour or up to overnight. Drain chicken and lightly dust with cornstarch and flour mixture. Deep fry in oil until golden and cooked through.
