I tried my hand at an old recipe today, substituting a slow smoker for the wood stove and a mild rub for the course spices that might have been used back then.
As I'm typing this, I just enjoyed a great kidney sandwich. It's wonderful when you can turn a $3 piece of meat into a 4 day meal, provided you keep your refridge under padlock.
The heart turned out a bit tough, but I carried it up to well done. Maybe less done next time.
