@blaskowitzj I think there's some confusion in this... the outer layer (flavedo) is where the essential oil glads are contained. The usual reason for rimming a glass or putting a layer of these oils on/in a cocktail is because it has a fragrant odor and aromatic, bitter taste. In watching this I'd say her expertise in the other ingredients, combined with this final step were designed to give a perfect balance of bitter and sweetness.

Damn amazing. Look at the way she adds the final touches with fresh orange juice. Notice how she avoids squeezing the orange skin to avoid the bitter flavors of the orange to alter the taste of the cocktail. She is very skilled.
