Why do you shake the milk after too. Unsettles the micro foam, and find something to rest the portfafilter on when you tamp. More even pressure that way - jealous Vivaldi 1 owner.

not bad, but you didn't purge your steam wand. if you don't purge you'll make unnecessary problems for your wand and/or boiler. very nice set up though.

Very pretty. Why don't you pull your shot first? This would reduce the ground's exposure to air.

Enjoyed watching the extraction. I'd like to know more about your grinder, as it looks like you've dialed in the timer. Don't you have a little left in chute? Do you clean out the chute after the PF fill, or do you normally use "all the grounds" including the chute remnants? I have the M4 doser stepless, and use a foam brush at the end of the grind to full clear my 18gram load of beans. I grind per shot. I don't preload the hopper; it's a freshness thing with me.
