I do love to cook and eat but often discover how much I just don't know. I described the healthier version Eggplant Zucchini Parmesan I was made for the show to a friend. She then informed me that it was more like an Eggplant Napoleon. I never even knew there was a dish called Eggplant Napoleon. Learn something new everyday!
Many people will salt the eggplant first in order to draw out some of the moisture and to remove the bitter flavor. Let it sit for about 30 minutes, rinse and pat dry before cooking. I don't always do that and find the eggplant tastes just fine. Find what works for you.
Prepare the Eggplant Zucchini Parmesan Napoleon and you'll find yourself saying "That's Vegetarian?!"

I never do the sweating step with eggplant. I usually just slice it, olive oil it, salt and pepper and then onto my bbq. What does the sweating do for it? I should just try, I know, but I'm always interested in the whys when I don't understand it.

Make sure you RINSE the eggplant after you "sweat" it with the salt. I forgot to do that so... yeah, it was a tad on the salty side. Lesson learned RINSE YOUR EGGPLANT!
