Learn how to make quiche with this easy bacon quiche recipe. This bacon quiche recipe makes a great breakfast, brunch, lunch or dinner recipes. You can make this bacon quiche in advance and freeze it (just thaw overnight in the fridge before reheating).
And this bacon quiche makes a great special occasion brunch recipe for Easter, Mother's Day, Christmas or New Year's Day brunch.
For this recipe, you'll need:
6-8 slices of bacon
1 medium onion, diced
3 large eggs
1 cup whole milk
2 Tbsp. fresh parsley (that's optional, but it adds some nice color)
1 frozen pie crust
1 cup shredded swiss cheese
1 cup shredded gruyere cheese - I'm actually using 2 cups of a swiss-gruyere blend
Preheat the oven to 400 degrees. Place the bacon in a cold skillet and fry over medium heat. Starting with a cold skillet helps keep the bacon from curling as it cooks. Drain the bacon paper towels and blot to get rid of the excess fat.
Now add the diced onions to the bacon drippings in the same pan and cook until softened, about 5 minutes.
OK, set them aside.
Place the eggs in a medium bowl, and add the milk. Whisk them together.
Now add some fresh black pepper to the egg mixture. Add the parsley if you're using it, and whisk it in.
Now take about one-third of the bacon and crumble it into the bottom of the pie crust. Top with half of the cheese.
Then sprinkle on another third of the bacon and the remaining onions. Top with the remaining cheese.
Now pour the egg custard mixture over the cheese - and you want to try to coat the cheese evenly. Then place the quiche on a baking sheet - this helps catch any spills that may occur in the oven - and bake for 10 minutes.
Reduce the oven temperature to 350 and bake another 30-45 minutes until the quiche is golden brown.
