On your shoulder press[by the way, awesome video dude] your including more of your upper chest, yes, but actually your hitting more of your front deltoids rather than the middle delt. But hey, i do the same thing, just make sure u hit the rear/middle delts too!

I don't do much of sitting shoulder presses, because of the whole upper chest thing. Trying to work my shoulders not my chest.

I noticed that arch in you back on your shoulder press. you can definitely see it hitting your upper chest quite a bit. I'd lower the weight a little and focus on keeping your back flat against the bench to isolate your shoulders. if you are gonna arch your back on your incline bench it essentially turns it into a flat bench. maybe raise the incline more if you wanna keep the arch. or try the underhand grip on flat bench like naturalmuscularity said. you will feel the doms in your upper chest
