This actually is a really dirty job if you consider all the bacteria required for cheese making. It just doesn't look like it because it appears to be a clean facility. I've always liked dirty jobs, wish they would come to the factory I work at but they won't allow cameras.

Just when I thought that I was getting closer to making cheese, I just discovered that a cheese cave, or room where u leave the thing to mature, needs to be at about 10-14 degrees celsius! Not sure i have the money to invest in a fridge closet...
