煮汁を煮立て、かれいを、切り目を入れた面を上にして入れる。再び煮立ったら煮汁をすくってかけ、10~15分煮る。途中、何度か煮汁をすくってかける。煮汁が1/2量に­なったら魚を端に寄せ、空いたところにごぼうを入れる。【関連レシピ】
