Sorry about the low audio quality, I was at work and just decided to record how I skin a salmon. But I think you get the gist of it:
Start from the tail, make a small incision towards the skin making sure that you don't cut through the skin! This incision is very essential in a good fillet because it guides your knife through the rest. The first slice after this incision is probably the most important to go slow and steady, no need to rush. A sharp and bendable knife helps heaps. Keep slicing and pull away. It does some practice. You can follow the annotations for additional instructions.
If you guys find this interesting, I can post many more videos from work on how we fillet whole salmons, and tons of different beef cuts like ribeyes, strips, sirloin, and many other popular types of steaks and roasts.
