To test your thermometer for accuracy boil water for at least 10 minutes and see what temperature your thermometer reads. The temperature should be 212 F (100 C). If you are above sea level you water will boil at a lower temperature. Note the difference between your thermometer and 212 F. My thermometer read 211 F for boiling. when I make candy I will bring my candy syrup 1 degree higher that the recipe calls for.
