This seems like bad, out of date canning advice. She hasn't acidified the tomatoes with citric acid or lemon juice, and doesn't process them nearly enough. I believe the USDA recommends processing them for 85 minutes - more than twice what she suggests. These are really important safety issues, so anyone new to canning should do more research before trying these recipes.
