@xbebeify It is completely edible, and quite delicious too. It's just a restaurant time saving trick to discard the part that needs to be peeled. All you have to do to enjoy the ends is take a vegetable peeler to them, strip off the tough outer layer on the lower third of the stalk and cook the same way as the tender-most parts. The stalk is delicious sort of like fresh peas. It's a terrible waste to throw them away. Asparagus is expensive enough already.

I love asparagus, never ate them raw.
I usually cook them in frittata (italian omelet), heated oil, chopped asparagus, let them cook for about 5 min and throw in the beated eggs. Cook 5 min per side and voilà

Well it is, but it's really tough. You'll probably get irritated from the fibers in it getting stuck in your teeth, That's why I don't eat the ends.

The ends are waaay too fibrous! VERY hard to chew. =D Enjoy!
