Uncle Vic with the help of his "niece" Coco, shows us how to make Proscuitto Wrapped Asparagus.


UNCLE VIC AND COCO are standing at the counter looking at the camera. They are both smiling. This episode will go very well for them. They can both tell as can we. On the counter are washed asparagus, slices of proscuitto, olive oil, and backing sheet lined with tin foil.

VIC

Hi there. Welcome to another episode of Uncle Vic's Kitchen.

COCO

It's the show where we show you a little something about home cooking.

vic

Cuz, you probably don-know how to do it right. Isn't that right, Coco?

COCO

It sure is, Uncle Vic. And don't forget to subscribe. (Pause) No, really. We can wait. Look for it.

COCO looks as if she is looking around the edges of what is likely the screen.

coco

Click the subscribe button. There, that wasn't so bad.

VIC

Today's recipe is very easy.

coco

That's right, Asparagus wrapped in proscuitto and made all crispy.

VIC

Perfect. Coco. How we gonna make this bit of tastiness?

COCO

Uncle Vic, you're going to preheat the oven to 425 degrees about 210 Celsius. If you have a gas grill, you can try it there, too.

VIC

We're grillin' next season. Don't spoil it for me.

COCO

Sorry. Carefully, wrap your asparagus in proscuitto and lay it down on your backing sheet. Do it for all of them. Then, you're going to pour some olive oil over them.

vic

Nectar from on high.

COCO

Pop the tray into you preheated oven. Wait about six minutes. Pull the pan out, get the asparagus rolled over.

vic

I like to shake the pan but you can use a tongs.

COCO

Wait about six more minutes. If you're like Uncle Vic, your gonna sip a little wine. Maybe look at the sports section.

VIC

I can't bear it.

COCO

Then, out they come. Uncle Vic, where'd you learn this one.

vic

Takes me back. When I was a kid I used to stay over at Guiseppe Giordano's house when my mother, God-rest-her-soul, was working a double-shift. Mrs. Giordano would have all the kids making these things.

COCO

Sounds like good times.

vic

It was until we were a little older and all the kids were making these things once and someone through a molotov cocktail through the window.

COCO

Uncle Vic! That's terrible.

VIC

You don't know the half of it. Peter and John were initially burned by the fire. But, Marco and Pauli both cut their feet on the glass and Mateo was in the basement for two days after it happened. No one know how to help him out.

coco

Uncle Vic, that's completely awful.

VIC

Don't even get me started on the girls. I need a stool and some wine...

coco

Here you go Uncle Vic. (To Camera) So, that's Asparagus and Proscuitto. Join us next time when Uncle Vic shows you how to make broiled Tomatoes.
