I just saw this on Science Channel. They showed how they can do this and everything. It's so cool. They have these little cells that they can control with muscles just like we can control our fingers. And they can choose the color and texture of their skin with it.

It would probably take either a rare mutation or selective pressure for that to happen.
I mean, it could happen, almost anything could happen...But what are the odds that mankind will abandon clothing and society and roam around nomadically again? Not very.

Who says it won't be long before that happens?

Actually it displays how they're feeling but temperature can sometimes affect a chameleon's colouration.

Sapience is probably predicated on eusocial hierarchies...If there were octopi colonies, higher level thought may be selected for.

Also, Chameleons only change color based on temperature and stuff. It's not intentional, and it doesn't help them hide. That is a common misconception.

It makes one wonder just what stops octopi from becoming sapient creatures.

Nope, octopuses are better because they can shape themselves for better camouflage and in the case of one species, accurately mimic other creatures. They can also shift their own texture.
