  • @tk291100 well known sushi bars around the country will always have clean hands. sushi is tastes best when hand crafted, if you wear a glove, there's bound to be a difference in taste.

  • @tk291100 Any chef with a sense of dignity would keep their hands impeccably clean. If it's a concern, sit at the bar and watch them to make sure their not picking their nose or butts. Besides, they make it better and have the better ingredients.

  • Excuse me, what is the name of this technique? Because I heard that are 4 differents technichs to make nigiri sushi. I use one that makes the sushi more curved and elevated. I heard this is an old japanese technique. I heard too about a technique based on a Aikido's technique.
