Ingredients:
THE STEW - 1 ½ onions, 3 tbsp garlic, salt, pepper, 2 lb pork, 2 lb chicken, OR Choice of meat, Italian seasoning, 1 tsp Liquid smoke, 28 oz tomatoes, 3 cups cubed potatoes, 14 OZ corn, 14 OZ lima bean, 14 OZ cream corn.
THE SAUCE - 4 tbsp butter, 1 ¾ cup ketchup, ¼ cup yellow mustard, ¼ cup vinegar, 1 tbsp garlic, 1 tbsp black pepper, ½ tsp Liquid smoke, ½ tsp lemon juice, ½ tsp cayenne pepper, 1 tsp Worcestershire sauce, ¼ cup brown sugar.

  • It's interesting how everyone seems to make this particular dish differently. It seems that the biggest requirement for it is that it has a sort of smoky barbecue-y flavour to it. And that everything else seems debatable far as possible meats and vegetables go.

  • The smoke flavor is supposed to come from your smoked meat. The stew orginated from hunters that used the game they caught at the time and the veggies they had on hand. You should use different meats and veggies to see what you like best.

  • I think it taste better? I dont always use butter. I do use oil if I have it. You should use whatever you have or like! It is cooking!

  • I always start out with a large "canner" stew pot. If stew is too watery or loose, add some potato flakes. This stew is best eaten with Homemade drop biscuits!

  • never had brunswick stew but i sure do wanta try it. good job dave looks good

  • I have to admit stews are delicious. I just don't have the patience to wait for them to cook. I would probably use a pressure cooker. Done in half an hour. Looks delectable though.

  • I first had Brunswick Stew in Newport News at the 1969 Denbigh Day celebration.

    They made it in a big ol' cauldron and it sure was some kinda good!

I have been craving stew but my choice of meat is venison (deer; for those who dont know) any other dish like deer steak or chilli (gets gritty and fine in chilli) could you "spice it up". or maybe you know of a different dish with venision. reach out to your fellow southerners! (my cajun blood has plenty of requests ;D)
