Pig Roast on a motorized spit. 140 pounds. Cabbage and Onions are stuffed inside and sowed shut with wire. Skin left on and scored with utility knives. Salt, pepper, and garlic rubbed in. During cooking we pull off the cooked skin. We call the cooked skin cracklins. It's better than store bought pork rinds.
