Hello, I'm Dan, The Home Grown Chef. Everything I know I either learned from my mother or from personal experience. Like those at Pixar i also believe that Anyone Can Cook. All it takes is a little effort and practice.

In my first episode I've decided to cover how to make my own special spice mix which I use in many applications.

Recipe:

Dan's Beef Rub
'Boone' Spice

2 tbsp Emeril's Essence
2 tbsp Prudhomme's Magic
2 tbsp Smoked Paprika
2 tbsp Sweet Paprika
2 tbsp Whole Black Peppercorns
1 tsp Whole White Peppercorns
2 tbsp Dried Minced Onions
2 tsp Garlic Powder
2 tbsp Italian Spice Mix(Or make your own: 2 tsp Dried Parsley, 1 tsp Rubbed Sage, 1 tsp Rosemary, 1 tsp Oregano, 1 tsp Thyme)
1 tsp Red Pepper Flakes
1 tsp Cayenne Pepper


Simple Steak

1 Steak
Kosher Salt
Spice(optional)

  • @IDaCashman Sadly just after finishing and uploading episode 3 My laptop that I use for editing power adapter failed. I haven't been able to film anything as a result. If everything goes as planned my next episode should be ready soon.

    I hope you can have a chance to make and try out my spice blend. So far no one has not loved it. The batch I made for this episode turned out to be the best so far because of the papricka I used in it. As I said the tin vs bottle really does make a difference.

  • Oh, now I understand why your profile picture is Yoda in a Chief's Hat. I was kind of confused at first.

    Well I was heavily educated in cooking compared to yesterday in 1 minute and 15 seconds. Now, I'm not an avid watcher of the Food Network or anything, but I can tell your show is awesome! Keep it up, I want to see more!

    One suggestion though: In a scene where background noise is heavy, don't add music.

  • @TheTigerStrike I have a good mic but the camera I got is a water-resistant one in order to be on the careful side filming around food. It can't be connected to a external mic, it's only real downside.

    The only parts where I had audio issues was running the blender, even with a mic to the camera I'd have to have redubed that and the store. I'm going to endeavor to avoid shoot at the regular supermarket from this point on. I've been able to edit the volume levels of the film in episode 2.

  • This was good: I really liked your use of that soothing music in the background, it goes with your voice and crescendos when you start to make the food. That was very clever.

    As @shinobiflare said, your audio quality wasn't great. getting a good microphone to coincide with the video would be best. Another thing would be to record a voice over that goes along with your preparations to make it easier for us to hear and follow along.

  • @shinobiflare Thanks, until I get the hang of this I'm sure there will be some teething issues.

  • Not bad--the audio quality could have been better, but you do have a relaxing voice, and that certainly helps.
