What's better than a great sandwich? One that is healthy and good for you...without losing its taste. How do you make a vegan Reuben? Watch Mike and enjoy!

How do you make my vegan Reuben? Here are the ingredients:

6 oz. tempeh (marinated)
2 slices vegan Swiss cheese
4 oz. organic sauerkraut
2 slices whole grain rye
Two tbs. thousand island/Russian dressing
1 tsp. olive oil

Tempeh Marinade:

2 tbs lemon juice
2 tbs soy sauce
1 tsp Worcestershire sauce (vegan)
1 tbs olive oil
1 tsp crushed red pepper flakes
1 tsp celery seed
1 tsp paprika
1 tsp coriander
1 tsp garlic powder
1 tsp cloves
salt and pepper to taste

Thousand Island/Russian dressing:

2 tbs nayonaise (vegan mayo)
2 tbs organic ketchup
1 tsp olive oil
1 tsp garlic powder
1 tsp celery seed
1 tsp Worcestershire sauce (vegan)
1 tsp olive oil
salt and pepper to taste

  • That looks so delicious! Your videos often make me hungry.

    You mentioned you would normally cook the sandwich in a pan with butter. If you still want that great butter flavor but don't want the dairy or cholesterol you can use Earth Balance. You can find it at markets such as Whole Foods and Trader Joes

    I have tried that vegan mayo you used and there is one that, IMO, is much better. It's called Veganaisse. I don't think Trader Joes carries it but markets such as Whole Foods and even Ralphs do.

  • Oops - of course I meant steam the tempeh for 15 minutes, not steam the sandwich! Wouldn't that be a soggy disaster! LOL

  • Recipe looks terrific, Mike. I'm trying it this evening, as a matter of fact.

    Tip: if you steam the tempeh before marinating, it helps in two ways - it cuts down on the sometimes bitter taste of tempeh out of the package, PLUS it helps the tempeh accept the marinade more readily, resulting in a tastier finished product.

    Tempeh should be cooked for a TOTAL of 20 minutes, so if you braise the sandwich for, say, 5 minutes, then you should steam it for 15 minutes beforehand, for 20 min. total.
