The cute little heart-shaped stopper floats up to shut off the valve, thereby preventing the last acidic drops from mixing in. Tastier, and supposedly healthier for you too.
Thanks for the vid, I was going to get one thinking that it made a nice crema, but I will stick with my old bialetti. I don't see any advantage to that valve, if you use good coffee it won't be bitter. I've never had a bad cup with the normal stovetop unit.

Mine says it gives 3 cups but I only get 1.5 cups and have to stretch it with hot water.
