Again.. in kitchens nothing goes to waste. She puts that stuff to the side and it will be later used for things like stocks, fillings, and other things. Don't assume.

This is actually what high end restaurants do because presentation is a large part of what you're paying for. Of course, the "discarded" or "wasted" potatoes often go into stocks or other dishes, not in the trash, which I bet more than half the commentators thought, judging by the comments.

Ahhhh, so that's how you dice, I was doing it all wrong, I was using a potato peeler and shaving down each individual potato till it was cubed. Last time I made potato salad I had to use 100 potatoes for a single serving and it took me 8 hours to prepare...thanks Chow.
