great videos chef tomm, but the ticking music in the background is really hard going after a minute or so.... any chance you could stop using it in your videos?

    Thank you so much chef.

I'm going back to my lab and basically starting from step one. I felt nervous because I never felt I fully grasp the concept of knife skills.

Your demonstration and explanation was just what I needed. Now I feel encouraged and motivated again.

Hi Chef Thom, Clear and understandable instructions ! However, the onion slicing/cutting isn't in Part 2 (must have gotten sliced off). Please upload a video on how to do this. Thanks !

Well technically you can wear swimming goggles and you won't cry when cutting an onion. But you will look rather silly.

I've found that coating my eyelids in heavy Vaseline while keeping a bottle of Visine handy (by the cutting board) for occasional squirting helps reduce tearing. If you have an older and more bitter onion, coat the eye area with dark molasses. There are properties in black strap molasses that shield the eye and basically make it hard to see thereby reducing inflammation (as well as the power to see), which, in turn makes it easy to not want to chop onions.
