Once the press is loaded, the bladder inflates and presses the fermented wine grapes softly releasing the juice which falls into the press pan. From there, we pump the wine from Napa Valley, Sonoma or another wine region in California into the French Oak barrels where they go through secondary fermentation (malolatic fermentation) and aging for 1-2 years.
