Very cool. The manual that comes with the Assistent is pretty vacuous wrt real usage parameters. 5Kg of dough at 72% is quite a load and it seems to be handling it quite well. You didn't say what setting you used, but it appears to be the lowest speed available. And you left the scraper in rather than taking it out after the dough begins to form. I also think that is the best way to use it though I have seen a video where the baker removes the scraper and lets the dough hook work the dough.
