stock should not be made at a rolling boil. Very gentle, with the occasional bubble rising to the top. Leave uncovered, and reduce religiously.

Great video! I'm making pot au feu as I write this, and I'm glad to see that mine looks the same with all the exact same ingredients -- so I know I'm on the right track. Only thing which is different with the pot au feu I make is that I add potatoes. This is a recipe a friend of mine from Limoges gave me. Excellent job!

Excuse me why do you even bother commenting if you are going to put a "NEGATIVE COMMENT WITH A SWEAR WORD" Perhaps you do not understand French Cuisine. Right now you are judging something by its cover. Rather than adding a negative comment with a swear word on a french style beef stew you have never tried before. Loser get a life, if you have time to add negative comments you can actually do something that is active for once!
