1/22 update...for lighter texture the 2nd go 'round, used 1 egg white + 1 egg instead of 2 eggs, and sifted both flours. the exact texture i was looking for. good flavor but when i make this again- which'll be soon since its the new house favorite- ill play with the spices some more.
1/26 update: increased nutmeg and added ginger. so it is now 1 tbsp cinn., 1 tsp nutmeg, 1/2 tsp ginger. also added 1/2 tbsp almond extract (since there are no nuts in this).
