It seems more that since his 'demonic' form is not the 'true form', the battle became sufficiently heated that he could no longer maintain the demonic transformation and was drained, thus needing to recuperate in his angelic form, leaving him open.
Or, as he is the Prince of Lies, he was lying and is just sufficiently impressed and decides ti go easier on you to speed things up.

It's in the guide. Go read it :P Also, you need to be on your second playthrough or you won't be able to fight him.
