  • I have that type of smoker as well. I take it camping and the campground loves it when I'm smoking stuf.

  • I found the electric version first - after learning a bit it sounds like the Weber Smokey Mtn. Cookers are the best... but I hope it may help you see what i did. 'Bout 8.5 hours for 6.5 pond brisket... 2 chimneys of charcoal (1 at a a time)

  • i did fat side up... on suggestion of cooks illustrated... seems to "baste" the meat.

  • Sauce on the brisket?! If you let your Brisket get done (not so wet) you wouldnt need sauce. Traditionally you should serve it on the side
