You need to get your strike temp figured out and your recipe sounds off. You should be using 2 row not pils. And what's different about using centennial, amarillo, and cascade for an IPA? You're begging for an infection with those open buckets of chilled wort and secondary fermentation. Just because you buy expensive equipment doesn't mean you automatically make good beer. You have a lot to learn.
