Soup ingredients:
1 whole chicken
1 bunch of parsley
1 bunch of thyme
2 bay leaves
8 whole peppercorns
3 cloves garlic whole.
1 lb of carrots chopped
1 bunch of celery chopped
1 onion diced
2 cans of chicken broth
2 medium potatoes cubed
In a large pot add chicken, thyme, parsley, bay leaves, peppercorns, garlic cloves, 1/2 the carrots, 1/2 the celery, and 1/2 the onion. Add the cans of chicken broth and enough water to cover the chicken. Bring to a boil, cover and let simmer for 2 - 3 hours.
Remove meat from chicken and set to the side. Return chicken bones to the broth.
Simmer for 30 - 45 min
Strain cooked vegetables and bones from broth and discard (be sure to keep the broth).
Add second half of the carrots, celery and onion. Add the potatoes. Bring to medium heat and cook for 30 - 45 min (until potatoes are done).
Add meat and cook an additional 20 min until meat is back up to heat.
Cook noodles separately and add just before serving.
Noodle ingredients:
2 eggs
1 tsp salt
water
1 1/2 cups flour
Break eggs into a mixing bowl. Save shells. Fill a 1/2 shell with water twice and beat eggs, water and salt. Then add flour gradually 1/4 cup at a time.
Kneed and roll on flat floured surface. Cut to desired lengths and let dry for 1 - 2 hours.
In a medium size pot, boil water. Add noodles to water and cook for 20 - 30 min.
Optional giblet step:
If you have giblets, you can boil them in enough water for them to float (about 2 cups) for about an hour.
Remove the giblets and discard. Add the broth to the soup for extra chicken flavour.

Explained very well, cooked the old fashion way, not many people have time or patience to do tihis, but definitely a real home made chicken soup. The only thing I was wondering what kind of flour do you use for your noodles?
