Thanks for sharing. I'll be trying this with bicarbonate of soda instead - chemically it should be pretty close to the potassium bicarbonate used in your recipe, and it's more readily available.

I know this ia way out of date, but I'll take my chances. I'm in Shanghai and probably have too much time on my hands, so I'm thinking of trying this myself. I watched you Part 1 and notice that you're making this with mainly semolina flour and some all purpose. That sounds like a good combination for eating but did you find it more difficult than 100% all purpose? Also, why the pot. bicarb., i.e does it make the dough easier to handle? Did it impart an unusual aroma and flavor.

I ended up using semolina all purpose mix because i was unable to find hard winter wheat at my grocer. The chinese guy i got some pointers from used hard wheat from korea. The potassium bicarbonate does something to the gluten to make it form long chains. It does add a flavor, some people call them soapy noodles. good luck.
