Use the soba cooking water for the broth - many buckwheat nutriments are dissolved while cooking. There is a reason why the cooking water is often used in Japan. High quality soba noodles have a strong buckwheat smell and they are more expensive. From experience, they are made in Japan. Korean and Chinese soba have a lot more wheat than buckwheat, which makes for a quite different experience. This is what I have seen in local stores.

@Coldfire523 At first, make her realise that she won't be healthy and (in order) will have shorter life, if she won't eat her veggies. And I see that she don't like those 'spice uppers'. That's quite wierd, cause she's missing so many delicious dishes...

I'm not vegan but mostly vegetarian. And when I say mostly it's because my other half is a carnivore. And she doesn't like most vegetables. Especially onions and bell peppers of any color. I think If I had a better knowledge of how to prepare other vegetables I could get her to eat some. But growing up in a non vegetarian family, I'm kind of intimidated by them. Do you think you can make a vegetables 411 of dummies video? :)).

can you teach us how to make nachos? I used to make it with meat and other animal products before I became a vegan. I really like nachos and want a way to make them vegan-ized.
