Actually that was a bad fillet. Don't know why people post these how to videos when they don't know what they're doing.

They can be a bit tough to fillet, and also have the skin and scales on, pretty good seeing we were in a rush and had a big esky to fillet, the main idea of the video is to cut up and over the rib bones, makes life easier, then you can easily skin the fish later. Our fishing regulations in Queensland and on the Great Barrier reef don't allow us to skin the fish,

@GOW808 I agree, very poor technique, i hate to see sawing like that, i cant seem to find many videos from pro's. Probably because most of us look at this and laugh and cant be bothered. I am trying to encourage some i know to film myself and them and upload. ( i don't have a good enough camera). This fish is about as easy as it gets to fillet. I guarantee i could fillet, skin and pin bone in less time than this entire video takes to do only skin on.

@GOW808 totally agree - My dad would of given me a clip around the ears if i did something like that.

Under reef regulations, charter boats are allowed to fillet fish on trips longer than 48 hours, but you still have to leave the skin on for Fish identification. I do have a video on filleting and skinning your fish fillets,

Fresh as, always bleed your fish, and put on ASAP, and use a sharp knife, could have been sharper for the video,
