I figured it out. It needs meat. More cheese, maybe sour creme and some dang meat! I know it breaks the whole southwest thing, but I'd add prosciutto.

Hey Mark Bittman, Your segments are the only reason I stay subscribed to this channel. Me being a chef and all. I learn a lot and I steal your recipes. And I picked up your book, "Bittman Takes on America's Chefs". Thanks for inspiring a not even close to being famous chef like me.
